Blackberry Shortcakes

Beer, beer, thank goodness you’re here!  Oops, did I say that out loud?  Oh well, it’s the weekend!  We survived another dreary, snowy rainy week, and only eight more weeks til summer!  HOORAY!  For us, beer is a weekend staple for cookouts and campfires during the warmer months.  I’m a big fan of Tap Room Copper Lager, and the hubby likes Dogfish Head Indian Pale Ale.  We’ve come a long way from the Natural Light (aka Natty Light) and Bud Light days of college lol. 😀


Since we’re all about boozy desserts in the Pearls + Girls kitchen this month, it seemed only natural that I would include a beer inspired dessert on the blog.  It turns out, beer + blackberries makes a fabulous shortcake!!!  When I make strawberry shortcake I use pound cake or angel food cake, but today I’m boozing it up with some beer!   Freshly baked beer biscuits, filled with sweetened whipped cream and blackberries, then drizzled with the most delicious blackberry lime sauce.  Sooooo good, the word ‘shortcake’ seriously DOES apply, because in a very short time, you will be licking your plate clean and heading back to the kitchen for seconds!  Happy Berry Beer Day to you!  Enjoy! 🙂

Blackberry Shortcakes ~ Pearls + Girls

Blackberry Shortcakes

Yield: 10 servings


    Beer Biscuits
  • 2 1/4 cups all purpose flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3 TBSP granulated sugar
  • 5 TBSP unsalted butter, melted
  • 3/4 cup beer
  • milk or cream for brushing tops
  • sparkling sugar (optional)
  • Blackberry Lime Sauce
  • 1/4 cup water
  • 2 TBSP sugar
  • Juice of one fresh lime
  • 6 oz. container fresh blackberries or 3/4 cup frozen blackberries
  • Sweetened Whipped Cream
  • 1 cup whipping cream
  • 2 TBSP powdered sugar
  • 1 tsp vanilla
  • 2 - 6 oz. containers fresh blackberries or 1 1/2 cups frozen blackberries, defrosted


  1. Preheat oven to 375 degrees Fahrenheit.
  2. Whisk together flour, baking powder, baking soda, sugar and salt in a mixing bowl.
  3. Add the melted butter and beer, stir with a fork to combine.
  4. Knead on a floured board a few times and form into a rectangle with your hands. You can use a rolling pin to help with the shaping process if you prefer.
  5. Using a chef's knife (NOT a serrated knife), cut biscuits into 10 squares and place on a parchment paper or Silpat lined baking sheet.
  6. Brush with milk or cream and sprinkle with sparkling sugar (optional).
  7. Bake for 15 minutes or until lightly browned.
  8. In a small saucepan over medium high heat add the water, sugar, lime juice and blackberries. Smash the berries with a fork to release the juices.
  9. Bring to a boil, then reduce heat to medium.
  10. Reduce the sauce for about 5 minutes.
  11. Pour through a strainer and allow sauce to cool to room temperature.
  12. Using a stand mixer fitted with a whisk attachment or a hand mixer with double beaters, beat whipping cream, powdered sugar and vanilla until soft peaks form, about 2 minutes.
  13. To assemble the shortcakes:
  14. Slice each biscuit lengthwise.
  15. Add a dollop of whipped cream and arrange berries on top.
  16. Drizzle with the blackberry lime sauce and top with the other biscuit half.
