‘Green Eggs and Ham’ Chocolate + Bacon Bark

Pearls + Girls is kicking off March with some kid friendly recipes!  First up, a twist on ‘Green Eggs and Ham’ to celebrate Dr. Seuss’ birthday!  This chocolate + bacon bark will be ready for snacking in less than one hour!  Graham crackers sandwiched between layers of dark and white chocolate, sprinkled with green scrambled eggs (seized white chocolate with food coloring) and crumbled bacon, this treat tastes just like the gourmet candy bars you can buy in the specialty food stores!  Soooo, Do You Like Green Eggs and Ham?  Yes, I like them, Sam I Am!  Enjoy! 🙂

'Green Eggs and Ham' ~ Chocolate + Bacon Bark ~ Pearls + Girls

‘Green Eggs and Ham’ Chocolate + Bacon Bark

Yield:  6 servings

Ingredients

6 graham crackers

1 cup dark or semi sweet chocolate chips (I prefer the Ghirardelli brand)

1 cup white chocolate chips, divided

2 drops green food coloring (I used Americolor Gel Food Coloring in Electric Green)

3 strips of bacon, cooked and crumbled

Directions

Line an 8X8 baking dish with parchment or wax paper.  Melt dark or semi sweet chocolate chips in a microwave safe bowl in 30 second intervals, stirring in between each intervel until melted.  Pour into the baking dish, then spread in an even layer using an offset spatula or butter knife.  Press the graham crackers into the chocolate and allow to set at room temperature for 15 minutes.  Melt 1/4 cup of the white chocolate chips in a microwave safe bowl for 30 seconds, stir, then continue to melt in 10 second intervals until melted if necessary.  Add the food coloring and mix together with a fork.  The food coloring will cause the white chocolate to seize, which will give it a crumbly texture, perfect for green scrambled eggs!!! 🙂  Set aside.  Melt the additional 3/4 cup of white chocolate chips in a microwave safe bowl in 30 second intervals, stirring in between each interval until melted.  Pour on top of the graham crackers, then spread in an even layer using an offset spatula or butter knife.  Sprinkle with the green chocolate crumbles and crumbled bacon.  Press toppings into the white chocolate so they will adhere.  Refrigerate for at least 30 minutes.  Pull up on the edges of the parchment paper or wax paper to remove from the baking dish.  Break or cut into pieces and serve immediately.  Store leftovers in an airtight container in the refrigerator.
