Hooray! It’s National Pie Day! I baked you a pie! 😀
Seriously, when I sat down to choose a pie recipe to share today, I had about 15 recipes spinning around in my head: fruit, cream, no bake, chocolate, etc. My brain was filled to the brim with crumbly crusts and creamy, sweet fillings. So what’s a girl to do? She must choose a pie that will please the masses (bakers and non-bakers alike)! What better than a simple pie inspired by the most shared Pearls + Girls recipe to date?
That’s right, these Buckeye candies I shared back in November became an internet sensation! The irresistible chocolate + peanut butter pairing will make for a deliciously simple Chocolate Peanut Butter Chess Pie. I saw a recipe awhile ago for a Chocolate Chess Pie from Add a Pinch, and I thought, “Wow, that’s pretty easy, dump, mix, pour, bake!” It even calls for a premade pie crust!!!! The extra step to make it peanut buttery just adds to the yumminess factor! It’s got a chocolate kick with a creamy peanut butter swirl beneath a crunchy crust, AND it’s a cinch to make!!!! Enjoy! 🙂
Chocolate + Peanut Butter Chess Pie
Yield: 8 servings
1 1/4 cups sugar
3 TBSP cocoa powder
1/4 tsp instand espresso powder (optional)
4 TBSP butter, melted and cooled
1 tsp vanilla extract
2 eggs, lightly beaten
Peanut Butter Swirl
1/2 cup powdered sugar
2 TBSP butter, melted
1 TBSP whipping cream
1/4 cup peanut butter
1 9-inch unbaked pie crust
Preheat oven to 350 degrees Fahrenheit. Using a hand mixer or a stand mixer fitted with a whisk attachment, whip sugar, cocoa powder and espresso powder with melted butter on high speed. Add vanilla and eggs. Mix for one minute. Scrape down bowl with a spatula, then beat an additional 1-2 minutes. This will lighten the mixture so your pie doesn’t sink beneath the chocolate crust on top. Pour mixture into a 9 inch unbaked pie shell.
In a mixing bowl, whisk together powdered sugar, melted butter, whipping cream and peanut butter. Using a spoon, place dollops of the peanut butter mixture on top of the chocolate batter. Swirl with a butter knife. Bake 40 – 45 minutes. Allow to cool for at least an hour before slicing.
Serve with a dollop of whipped cream or ice cream, like this delicious Brown Bread No Churn Ice Cream from House of Bakes. It is super simple, doesn’t require an ice cream machine, and the addition of the toasted bread crumbs? OMG, a divine combination, if I say so myself!
