Flourless Peanut Butter Cookies

We go through natural peanut butter in this house like crazy!  Everyone in our family adores peanut butter, especially my husband.  Peanut butter and jalapeno sandwiches, peanut butter on celery, peanut butter pie, and his all time favorite, peanut butter cookies.  I could keep going, but a feel a rendition of Bubba’s shrimp rant from Forrest Gump comin’ on…. 😉

Flourless Peanut Butter Cookies ~ Pearls + Girls

These Flourless Peanut Butter Cookies are a cinch to make, it’s really not even worth getting out the mixer for this one. Super simple, super yummy AND gluten free!  This is the 5th recipe in my first blog series, 12 Days of Cookies.  Enjoy! 🙂

Flourless Peanut Butter Cookies

Yield: about 18 cookies

These cookies are naturally GLUTEN FREE. To make them NUT FREE, substitute sun butter for the peanut butter.


  • 1 cup peanut butter ( I use natural peanut butter)
  • 3/4 cup brown sugar, packed
  • 1 egg
  • 1 1/2 tsp vanilla extract
  • 3/4 tsp baking soda
  • 1 pinch sea salt


  1. Preheat oven to 350 degrees.
  2. With a mixing bowl and spatula, electric mixer or a stand mixer fitted with a paddle attachment, combine peanut butter and brown sugar until smooth and creamy.
  3. Add egg, vanilla, baking soda and a pinch of sea salt. Mix until fully combined.
  4. By heaping tablespoon drop dough onto a parchment paper or Silpat lined baking sheet.
  5. Use the back of a fork to form a crisscross pattern on each cookie.
  6. Bake for 10-12 minutes until edges are lightly brown.
  7. Allow cookies to cool on baking sheet for 2 minutes before moving to a cooling rack.

    I’m Morgan’s (Domokos) mom/aka Taylor & Kaitlyn’s garandma. I love to bake and find it creative and relaxing. My husband, Jeff, loves to eat my baked goods so we make a great team!
    I LOVE peanut butter but developed and allergy to peanuts some years ago and now enjoy Soy Wonder butter, which is pretty close to the real stuff.
    Do you think that would work for the flourless peanut butter cookies? I’m looking for a gluten free idea for a friend of mine.

      Hi Paula, thanks for stopping by! 🙂 My girls are good buddies with Taylor and Kaitlyn! Have you substituted soy butter in recipes before with a favorable result? I have never baked with soy butter, but if you’d like to give this recipe a try with a soy substitute and let me know how they turned out that would be awesome!

    Hi Katie,
    I made these yesterday with the Soy Wonder and they are awesome! This was my first time using Soy Wonder in baking but the consistency is the same as peanut butter, so it was kind of a no brainer.
    I’d say it’s a very good option for all those with peanut allergies, like me!
